Cheese is one of the most consumed products by Albanian families.

As an ingredient in various recipes or as an accompaniment to meals, cheese is the ideal choice.

But one problem we often encounter is how to maintain it?

Regardless of the method, the cheese should always be stored in the refrigerator, thus preventing its spoilage.

These methods are for cheese that is bought in dairies, not for cheese packed in plastic boxes that can be bought in markets.

Packaged cheese after opening usually starts to spoil a week before the expiration date set by the manufacturer.

While cheese which is bought open can be stored from 1 to 6 months depending on the method of storage.

Signs that your cheese is starting to break down

One of the main problems when the cheese is placed in the refrigerator, is that it dries.

Thus it loses natural juices and hardens and changes taste.

One of the most popular methods by Albanian housewives is dipping in brine.

You can get the brine through the dairies or you can prepare it yourself at home very simply.

Just put a pot on the fire with a liter of water and then add 3-4 tablespoons of salt.

You have to mix it until the salt grains are dissolved, and let the water boil.

Once it has cooled completely, you can transfer it to the dishes where you will place the cheese.

AgroWeb.org advises you that the cheese should be totally covered in brine.

If stored this way the cheese can be stored for up to six months in the refrigerator.

With Milk

The other method is storage in milk. Usually this method is used for goat cheese.

As this type of cheese has a stronger structure, the milk manages to soften it a bit.

Also this method is ideal if your cheese is very salty.

Milk manages to neutralize salinity and maintain the porosity of the cheese.

With this method the cheese is stored for less time.
